A fridge full of not-enough-for-a-serving leftovers and grocery day isn't until tomorrow. Time to get creative. My driving question was, what do I most want to make sure I don't waste? My answer: he good bacon I bought for valentines day breakfast.
Between that, a half dozen eggs, shredded cheese from taco night, and a can of Pillsbury biscuits purchased with no real plan in mind, I had the makings of a breakfast pull apart bread. After inventing it in my mind, I googled to see if anyone else had tried it. I did after all only have enough ingredients for one go at this. I didn't want to screw it up. Sure enough, I'm not the leftover genius I thought I was. It's been done here and here and probably other places as well. But I'm going to write out my own version since I feel like inventing something without knowing its's a thing counts. Right? Maybe not, but whatever. Here it is.
Cheesy breakfast bread
6eggs
Salt pepper and parsley to taste
A fist full of cheese
All the leftover bacon (8 slices)
Pillsbury flaky layer biscuits
Heat your oven to 350*
Grease a casserole dish
Quarter biscuits and layer in the dish
In a mixing bowl whisk eggs, salt, pepper, parsley, cheese, and bacon.
Pour the mixture over the dough, spreading out evenly.
Bake for 20-30 minutes.
I am in love with this dish. Now I need to get myself Invited to a brunch so I can bring this killer meal.
